i had a busy and kind of terrible week because of work and office life.

at the end i realized again that we need to slow down, take a deep breath and feel the unique moment that is just ours before we confront the situations that are difficult for us.

i also realized that with family and friends – including our companion animals, everything finds true meaning.

so, going out, or inviting family and friends for a dinner party, or having a peaceful evening meal with your pets – everything works! you always get some perspective in talking and listening – and observing.

for the homey solutions here is my “full circle” vegan cheesecake recipe:


raw cashews (3 cups – soaked)

raw almonds (1 cup)

coconut oil (1 tablespoon + 1/2 cup)

medjool dates (4)

cinnamon (1 teaspoon)

maple syrup (1/2 cup)

salt (1 teaspoon)

for the crust, i process the almonds, medjool dates, 1 tablespoon coconut oil in a food processor.

for the top, i process the cashews, cinnamon, coconut oil, maple syrup and salt in a blender.

into a pie dish, i pour the the crusty part first and then, on top of it, the cheesy part.

this cake is completely raw, so all you need is to put it in the fridge for about 1-2 hours and then enjoy it!

you can also use chopped fruits on top – berries are my favorite!

like everyday life, my cake has a dark and a bright side 🙂 but that’s just how it seems from one perspective – so, we should remember that we can always shift our perspective whenever we feel stuck.

this cake goes well with a good karma, and so is life.
